A satisfying starter, tea time snack. Somewhat healthy! Steamed potatoes, peas, green beans, carrots mashed with onions, ginger, chilies, dipped in a batter of chick pea and rice flour, and deep fried. While you can make this with just potatoes, the addition of vegetables adds some color and a lovely dimension to the dish.
Mixed Vegetable Quick Curry (Kadamba Curry)
A super simple side dish. Sometimes, you have a lot of vegetables – a couple of potatoes, a carrot, some peas, half a cauliflower, but none enough to make a side dish. This is a perfect curry to use up all of those, and make a great curry that’s perfect as a side dish for rotis. This is a great lunch box item, a quick breakfast dish, or an excellent vegetable to go along with a dal, and some rice or rotis.
Potato Masala For Dosai/Poori
This is the ubiquitous stuffing that goes inside the crispy golden folds of dosai (please don’t call it pancakes). Also a popular side dish for pooris, specifically in the southern parts of India, called poori masal. Favorite of almost anyone, it’s a very simple dish to make.
Potatoes In Tomato Gravy (Aloo Tamatar Subzi)
A simple side for pooris/chapathis/rotis. Minimal ingredients, no fuss, rustic side dish. This can quickly become a go to dish, it’s vegan, and needs no garlic or onions. All you need is potatoes, tomatoes and a few staple spices that most pantries would have.
