Hands down, the easiest, quickest and the simplest mango pickle! South Indians all over the world love to eat this with a bowl of cool yogurt mixed with rice to cool off during the hot summer months. Instant pickle, although instant and pickle in the same sentence seem like an oxymoron!
This dish is a popular, quick and easy breakfast dish. It’s easy to digest, low on carbs, and healthy. Since it does not have any protein value, I add peanuts. I also add coconut at the end for flavor.
A side dish for puris with assorted peppers, coated with a spicy mix of chickpea flour and chili powder!
This is a salad bursting with colors and flavors. I created this as a variation of the corn and black bean salad, and substituted boiled peanuts for black beans, and used my homemade dressing of olive oil/lemon juice, salt and pepper. Instant hit at parties, I never have leftovers how much I make of this.
