This is a good summer salad that can be a meal by itself. Use season fresh beefsteak tomatoes and good quality cheese. Add some toasted ciabatta and you have a meal in under 30 minutes or less.

Ingredients
- 2 Numbers Tomatoes Juice, ripe, beefsteak
- 1 Block Fresh Mozzarella
- 1/4 Cup Fresh Basil
- 1/2 TSP Coarse, Sea Salt
- 1/2 TSP Freshly Ground Black Pepper
- 3 TBSP Balsamic Vinegar Good quality store bought is fine

Instructions
- Slice tomatoes into 1/4 inch slices
- Cut onions into thin slivers
- Slice mozzarella into same thickness slices as tomatoes
- Hold the basil in a tight pack and cut into thin strips
Assemble
- Place tomatoes and cheese in alternate layers on a plate
- Garnish with onion and basil
- Sprinkle salt and pepper
- Drizzle vinaigrette just before serving!
Recipe Notes
I sometimes make this salad with burrata, a soft mozzarella cheese filled with cream and intensely rich and creamy.
