This is a good summer salad that can be a meal by itself. Use season fresh beefsteak tomatoes and good quality cheese. Add some toasted ciabatta and you have a meal in under 30 minutes or less.

Caprese Salad

Ingredients
  • 2 Numbers Tomatoes Juice, ripe, beefsteak
  • 1 Block Fresh Mozzarella
  • 1/4 Cup Fresh Basil
  • 1/2 TSP Coarse, Sea Salt
  • 1/2 TSP Freshly Ground Black Pepper
  • 3 TBSP Balsamic Vinegar Good quality store bought is fine

  • 1 Block Fresh Mozzarella
  • 1/4 Cup Fresh Basil
  • 1/2 TSP Coarse, Sea Salt
  • 1/2 TSP Freshly Ground Black Pepper
  • 3 TBSP Balsamic Vinegar Good quality store bought is fine
Instructions
  1. Slice tomatoes into 1/4 inch slices
  2. Cut onions into thin slivers
  3. Slice mozzarella into same thickness slices as tomatoes
  4. Hold the basil in a tight pack and cut into thin strips
Assemble
  1. Place tomatoes and cheese in alternate layers on a plate
  2. Garnish with onion and basil
  3. Sprinkle salt and pepper
  4. Drizzle vinaigrette just before serving!
Recipe Notes

I sometimes make this salad with burrata, a soft mozzarella cheese filled with cream and intensely rich and creamy.
