Chilli Cheese Toast
A grilled cheese sandwich with some heat for those cold winter months. Add a tomato soup, and this sandwich will wake you up!

Ingredients
  • 4 slices Good bread country white or some rustic whole grain works great
  • 1 cup grated cheese Sharp cheddar or cheddar works great
  • 1/2 number Medium onion - white or red
  • 1 numbers Medium tomato
  • 3 or 4 numbers Thai hot green chilies Serrano, jalapeño also work well
  • 2 tbsp Butter

  1. Heat a cast iron or other skillet on medium heat While the skillet is heating: 1. Get the butter out to soften it a bit 2. Finely chop the onions, tomatoes and green chilies 3. Butter the bread on both sides or one side
  1. Place the buttered side down on the skillet if buttering one side only
  2. Place the vegetables on one slice of the bread
  3. Place the cheese on the other slice
  4. When the bread starts to toast, carefully lift one of the slices and place on the other
  5. Continue to press down and toast until the cheese starts to melt
Recipe Notes
  1. Omit any of the vegetables - onions, tomatoes if you don't like them. But if you omit chilies, just don't call it chili cheese toast 🙂
  2. Add other vegetables you may fancy - grated carrots, cilantro, boiled mashed potatoes
  3. Add a cup of tomato soup for a hearty lunch or supper
