Ingredients
- 4 slices Good bread country white or some rustic whole grain works great
- 1 cup grated cheese Sharp cheddar or cheddar works great
- 1/2 number Medium onion - white or red
- 1 numbers Medium tomato
- 3 or 4 numbers Thai hot green chilies Serrano, jalapeño also work well
- 2 tbsp Butter

Mise en Place
- Heat a cast iron or other skillet on medium heat While the skillet is heating: 1. Get the butter out to soften it a bit 2. Finely chop the onions, tomatoes and green chilies 3. Butter the bread on both sides or one side
- Place the buttered side down on the skillet if buttering one side only
- Place the vegetables on one slice of the bread
- Place the cheese on the other slice
- When the bread starts to toast, carefully lift one of the slices and place on the other
- Continue to press down and toast until the cheese starts to melt
Recipe Notes
- Omit any of the vegetables - onions, tomatoes if you don't like them. But if you omit chilies, just don't call it chili cheese toast 🙂
- Add other vegetables you may fancy - grated carrots, cilantro, boiled mashed potatoes
- Add a cup of tomato soup for a hearty lunch or supper
