Instructions
Mise en Place
Heat a cast iron or other skillet on medium heat
While the skillet is heating:
1. Get the butter out to soften it a bit
2. Finely chop the onions, tomatoes and green chilies
3. Butter the bread on both sides or one side
Place the buttered side down on the skillet if buttering one side only
Place the vegetables on one slice of the bread
Place the cheese on the other slice
When the bread starts to toast, carefully lift one of the slices and place on the other
Continue to press down and toast until the cheese starts to melt
Recipe Notes
Omit any of the vegetables – onions, tomatoes if you don’t like them. But if you omit chilies, just don’t call it chili cheese toast 🙂
Add other vegetables you may fancy – grated carrots, cilantro, boiled mashed potatoes
Add a cup of tomato soup for a hearty lunch or supper
