Eggless Orange Tutti Frutti Cake
Recipe Source: I have been wanting to try this cake for a while now, and a weekend party gave the perfect opportunity. I baked two loaves. They turned out pretty good. The only changes I would make the next time is to make it with olive oil instead of butter, and add some orange zest to the batter. I completely forgot to take pictures while making it, so all the pictures I have are of the finished product!

Ingredients
  • 4tbsp Butterexperiment with olive oil or any other oil
  • 1cup condensed milk
  • 11/4cup FlourPlus 1/2 tsp for coating the tutti frutti
  • 1/4cup tutti fruttiavailable in Indian grocery stores
  • 1/2tsp baking soda
  • 11/2tsp baking powder
  • 1/4cup orange juiceroughly the juice of two medium sized oranges
Instructions
  1. In a bowl, mix together melted butter and condensed milk
  2. Add the orange juice and whisk together
  3. In a separate bowl, sift together the flour, baking powder, and baking soda
  4. Add the liquid to this and mix it all into a batter
  5. Toss the tutti frutti in a small bowl with a tsp of flour; this prevents them from sinking to the bottom of the cake
  6. Preheat oven to 350 deg farenheit
  7. Grease a loaf pan
  8. Pour the cake batter; top with a few more tutti frutti
  9. Bake for 25 minutes
  10. Reduce the temperate to 300 and bake for 5 more minutes, by now the cake should be golden all around and a toothpick inserted in the center should come out clean
  11. Remove from oven and cool on a wire rack before slicing
  12. Enjoy with a hot cup of chai

Verdict:

It was good. But, next time, I would make the following changes:

  1. Replace the butter with oil
  2. Add orange zest to the batter; I felt the orange fragrance didn’t come through completely
  3. Experiment with whole grain/multi grain flour
