Ghee is made by melting unsalted butter until it runs clear and turns a golden brown. Ghee is used in Indian cooking a lot - typically in seasoning in the modern days. Traditional Indian cuisine calls for cooking whole dishes in pure ghee which is frowned upon anymore for health reasons. But, a small quantity of ghee adds an amazing flavor to any dish.

- 2 sticks Unsalted butter

Instructions
- Heat a sauce pan and drop the sticks of butter in it when warm
- Keep the heat on med-high until all the butter has melted, about 2 minutes depending on how cold the butter is
- At this point, reduce the heat to low, and let it just simmer until the butter turns a golden brown color, and has tiny bubbles all over the surface
- When cool enough, transfer to a clear, dry glass jar
