Peanut Podi (Peanut Powder)
This is a quick, healthy powder (podi) that makes a great side for idli, dosa, methi paratha, and to mix with rice.

  • 1cup Raw peanuts
  • 1tbsp flax seeds
  • 1-2cloves garlic
  • 1/4cup Curry leavesless/more as needed
  • 3/4cup red chiliesless or more as needed
  • 2tsp Saltadjust to taste
  • 1/2tsp oil
  1. Gather all the ingredients
  2. Heat a kadai/pan
  3. Dry roast the peanuts, flax seeds until fragrant, about 3-4 minutes; remove to cool to a plate
  4. Heat the oil in the same pan
  5. Add the garlic, chilies, and curry leaves and toast for a few minutes, taking care not to burn them; remote to the plate
  6. Cool the ingredients, and blend into a powder
  7. Add the salt
  8. Store in a clean, dry glass container

There are probably many variations of this, but this is my favorite. It comes in handy when I don’t have time to make a chutney or sambar to go with idli/dosa, and even goes with rotis. I also love to eat this mixed with rice, with a little bit of oil drizzled over. Yum!
