Ingredients
  • 1cup Fresh basil leaves, washed and dried
  • 2cloves garlic
  • 1/4- 1/2cup Pine nuts
  • 1/4 – 1/2cup Extra virgin olive oil
  • 2tsp SaltReduce or increase as needed
  • 1/2tsp Freshly Ground Black Pepper
Instructions
  1. Wash basil leaves well and dry them on a towel. Add everything except olive oil and salt to blender or food processor jar, pine nuts at the bottom
  2. Start blending, drizzling or adding olive oil as you go until you get a paste to the consistency you like; I like bits of pine nuts in my pesto. Some prefer a smooth paste.
  3. Add salt to taste and pepper to taste
  4. Toss with pasta of your choice

Substitutions to try:
– Replace pine nuts with walnuts or cashew
– Add green chilies to spice it up

Serving Suggestions:
– as a base for pizza instead of tomato sauce, goes great with goat cheese, red onions, and sundried tomatoes
– as a sandwich spread
