Eggless Apple Walnut Bread
This cold cloudy weather (yes, for Floridians, anything below 70 is the arctic freeze) makes me want to deep fry or bake. I haven’t made banana bread in a while, but I was out of bananas. But had Gala apples. And decided to replace bananas with apples. I knew it would be a bit dry as bananas provide a lot of moisture in the bread, and I ended up using about 3/4 cup of milk in the recipe. I could have used apple sauce (which I didn’t have), or apple juice which I did have, but for some reason milk sounded good. And the bread turned out rich, moist and delicious! This is the same recipe for my eggless banana bread which I tweaked to use flax meal for eggs. The banana bread doesn’t use any flax meal and I simply leave out the eggs.

Ingredients
  • 3cups FlourUsed a mix of 1.5 cups AP flour, and 1.5 cups of whole wheat/atta
  • 2cups sugarI reduced to roughly 1.5 cups of sugar – half raw sugar, half coconut sugar
  • 1/2cup walnuts
  • 2medium apples, diced
  • 2/3cup avocado or any mild cooking oil
  • 2tsp baking powder
  • 1/2tsp Salt
  • 1/2tsp baking soda
  • 1tsp cinnamon powder
  • 12 tbsp luke warm water3 tbsp luke warm water + 1 tbsp of flax meal for each egg; the recipe calls for 4 eggs
  • 4tbsp flax meal, or flax seeds powdered
Instructions
  1. Measure out and gather ingredients; mix the flax meal in the water and let it rest for about 10 minutes.
  2. Take the flour in a wide deep bowl; preheat oven to 350
  3. add all the dry ingredients (baking powder, baking soda, salt, sugar, cinnamon powder)
  4. Add the oil, followed bu the flax meal egg
  5. At this point, I started mixing it and found that it was too dry without the moisture of the bananas, and ended up adding about 3/4 cup of milk, after which it came together easily
  6. Add the diced apples, and walnuts
  7. Pour into two loaf pans, greased on the bottom and sides
  8. Bake for 50 minutes in a preheated 350 deg oven
  9. Take out and cool on a wire rack
  10. Slice when cooled down; this turned out very moist, and the bread deliciously broke off into chunks, but managed to slice once loaf
  11. Enjoy with a cup of coffee/tea!
Recipe Notes

Substitutions:

4 eggs replaced with 12 tbsp luke warm water + 4 tbsp flax meal

2 cups white sugar replaced with 3/4 cup raw sugar + 3/4 cup coconut sugar

Added 3/4 cup of whole milk

Make it vegan:

Replace milk with apple sauce, apple juice of any nut milk such as almond milk
