After learning to make pizza and gelato in Florence, Italy in April, I finally got around to actually making the gelato a couple of weekends ago.
A few points:
Gelato is Italian ice cream. It has nothing to do with gelatin.
Gelato has more milk, and very little cream. Ergo, less fat, and somehow, an enhanced taste.
It has at the most 4 ingredients, and is very easy to make. It’s a bit denser than ice cream, which I actually like.
I used the Williams Sonoma ice cream maker, you may use whatever tools/methods you typically make ice cream or sorbet with.
For my very first attempt at a frozen dessert, I chose mango flavor. I also stuck with raw sugar, and just 1 ripe mango, as I like it understated and not too sweet.
You may use more flavor, and more sugar. Play with it. We loved the results.
Eggless Orange Tutti Frutti Cake

I have been wanting to try this cake for a while now, and a weekend party gave the perfect opportunity. I baked two loaves. They turned out pretty good. The only changes I would make the next time is to make it with olive oil instead of butter, and add some orange zest to the batter.
I completely forgot to take pictures while making it, so all the pictures I have are of the finished product!
Oats Dates Nuts Laddu
A quick healthy dessert to satisfy your sweet tooth without compromising too much of the health quotient. Made with only dates, oats, nuts and a little bit of ghee, takes all of about 15-20 minutes to make (excluding the dates soaking time).
I completely forgot to take pictures as I was making this, but it’s such a simple dish and got done within 5 minutes once I had everything ready, that I felt it was okay to post just the results!
Eggless Chocolate Mousse
Mousse means foam in French. Going by that definition, this dessert should be light as foam. I scourged the internet for a light eggless version to make for our anniversary, and ended up grabbing bits and pieces from a few sites, see Recipe notes for links. This is Raj’s favorite dessert. I made 4 glasses, and he polished off 2 of them as soon as they were just about set. I think he liked it!
Panna Cotta
Panna Cotta in Italian means cooked cream. A simple, elegant, and sublime dessert made with just 3 basic ingredients: milk, cream, and sugar, with a gelling agent such as agar agar for a vegetarian version, or gelatin.
