Panzanella – a salad made with stale cubed bread, some basic dressing, tomatoes, cucumbers, red onions, and fresh mozzarella. And salt and pepper. There. That’s the recipe, and it comes together beautifully in about 15 minutes.

No intro needed for this yummy salad! It’s so easy, a middle school aged kid starting to cook simple dishes can do this. Great for weekday lunches, or a light snack.
Mimi’s Kick Ass Salad
This is a salad bursting with colors and flavors. I created this as a variation of the corn and black bean salad, and substituted boiled peanuts for black beans, and used my homemade dressing of olive oil/lemon juice, salt and pepper. Instant hit at parties, I never have leftovers how much I make of this.
Caprese
This is a good summer salad that can be a meal by itself. Use season fresh beefsteak tomatoes and good quality cheese. Add some toasted ciabatta and you have a meal in under 30 minutes or less.
