Minestrone is an Italian soup made mostly with vegetables, stock, beans, and pasta. This is a lifesaver for vegetarians eating out, especially if you don’t do eggs – most restaurants make it with vegetable stock, but I always check to make sure it is not made with meat stock.
The soup is hearty, and very satisfying on a cold and blustery night. And it comes together beautifully with not much effort in about 30-45 minutes.

A different variety of rasam, a bit heavier than the light recipe because of the addition of coconut. Freshly ground spices add amazing flavor to this wonderful rasam that is popular in the south. Enjoy with hot rice, or as a soup!

Jeera Rasam (Pepper Jeera Rasam)

This rasam is super easy, and requires no cooked dhal (toor dal is added to the spices and ground into a paste).
This is a very flavorful rasam that is highly recommended when you’re suffering from a cold, or have had a few days of heavy food, and need something light. It makes a wonderful soup, especially when the weather outside is chilly and yucky.
